Yes, already

Well. The good news is that I’m making headway in my book proposal. I was working on it at a cafe on Saturday afternoon, and I could actually see it taking shape, right there in front of me. I love that feeling. I was absolutely elated. I lost all sense of time. I was in it up to my eyebrows. And I must have looked it, too, because as I was packing up to leave, the girl sitting next to me commented politely that I must have gotten some very good work done, because I was staring at my computer so intensely. And I decided that from now on, I should work only in the privacy of my home, so no one else has to witness that.

And that’s the good news. The bad news is, I’m tired. Did you know that I have a neighbor who, though at home all day, waits until night to do his gardening and outdoor home improvement projects? As I type this, my poor, stressed-out dog has his nose pressed to the window, watching our neighbor stroll the length of his yard, surveying the territory with a flashlight of such size and power that it could double as a fine searchlight. Living next to this is one of many things that can make a person tired.

I hope you people were serious when you said you were excited about the prospect of more breakfast recipes in 2011. Because I have another one for you. Yes, already. I’m going to try to limit it to one a month from now on, but what can you do? I woke up the other morning, realized I had the ingredients for a batch of oatmeal popovers, and the next thing I knew, they were made.

As with last week’s fresh ginger muffins, this recipe - or at least the ingredients part of it - comes to us from Ms. Marion Cunningham and The Breakfast Book. It’s a very subtle riff on a classic popover, one that includes a fistful of rolled oats that you’ve coarsely ground in the food processor. Her headnotes explain that she uses the oatmeal for additional texture, and I can attest that the result is really lovely: a little heartier, a scant degree more substantial, than an ordinary popover. But I would add that the oats bring some flavor too, which I like very much. It’s a quiet flavor, one you only notice if you look for it, but it’s there. Ordinary popovers can sometimes taste too eggy, but the oats counter that, giving the flavor some depth and grounding. It felt fiddly to haul out the food processor first thing in the morning, before I’d even put on real clothes, but I was glad I did. Actually, I might grind extra oats next time, so they’re ready whenever I want them.

I have to admit, though, that I did make some adjustments to the method. Ms. Cunningham starts her popovers in a cold oven, but that sort of terrifies me. I have an electric oven, and the only time that I tried the cold-oven popover method, the lower heating element scorched my popovers in the process of preheating. I am not a nice person when my breakfast gets ruined. Maybe it was a fluke, but I don’t use the cold-oven popover method anymore. I start my popovers in a hot oven, and I also preheat the pan before I pour in the batter, which gives them an extra boost. The method that I like best is detailed nicely in the book The New Best Recipe, and so that’s what I’ve written below. Basically, you get Marion Cunningham’s concept and ingredients, with The New Best Recipe’s method. I hope she’ll forgive me for taking such liberties.

Oatmeal Popovers
Adapted from The Breakfast Book and The New Best Recipe

I’ve made these popovers twice now, and I find that they don’t rise quite as exuberantly high as normal (oatmeal-less) popovers. But they’re still perfectly airy on the inside, and the oil in the cups of the pan make the outer edges nice and crisp.

Oh, and Marion Cunningham says that the combination of oatmeal and marmalade is very good. She’s right.

2 large eggs
1 cup whole milk
¾ cup all-purpose flour
1/3 cup rolled oats, coarsely ground in a food process or blender
½ tsp. salt
1 Tbsp. unsalted butter, melted
1 Tbsp. vegetable oil, for the pan
Orange marmalade, for serving (optional)

In a large bowl – ideally one with a pour spout, if you have it – whisk the eggs and milk until well combined, about 20 seconds. Whisk the flour, oats, and salt in a separate bowl, and add to the egg mixture. Stir with a wooden spoon or spatula just until the flour is incorporated. The mixture will still be lumpy. Add the melted butter, and whisk until the batter is smooth, about 30 seconds. Set aside at room temperature for 30 minutes. (This gives the gluten time to relax and brings the chilled ingredients closer to room temperature, so that the batter isn’t quite so cold when it goes into the oven.)

While the batter rests, put ½ teaspoon oil into each cup of a popover pan. Adjust the oven rack to the lowest position, place the popover pan in the oven, and preheat to 450° F. After the batter has rested, remove the hot pan from the oven and, working quickly, distribute the batter evenly among the 6 cups of the pan. (If your bowl doesn’t have a spout, you might want to transfer it to a vessel that does; it’ll allow you to work much more quickly.) Return the pan to the oven. Bake for 20 minutes - and DO NOT open the oven door. Lower the heat to 350° F, and bake until evenly golden brown, about 15 minutes more. Remove the popovers from the pan and cool for 2 to 3 minutes before eating.

Yield: 6 popovers

Note: If you don’t have a popover pan, you can use a regular muffin tin. Don’t use all 12 cups, though; use only the 10 outer cups. You’ll need extra oil to grease them.

I don't think she'd mind the modification, because five years after The Breakfast Book, she wrote in The Supper Book: "But I had just about given up on making [popovers] over the last few years because they kept turning out to be sullen little muffins, pop-unders. I had forgotten that popovers rise highest when they get a forceful amount of heat quickly . . ." She also goes on to recommend individual containers. I love her comment about "pop-unders."

neighbors, can't live em, can't live without em! ours always have good and not so good quirks and they prob think the same thing about us! me hubby and me moved from near your restaurant in Ballard last spring and there i miss the fine lolling cafes in ballard to spend time in! i would walk to honore, to enjoy the quiet friendly atmosphere and wonderful smells and could easily sip coffee and read for an hour or more!

I enjoy your writing and your sense of humor, and always, always: the recipes. It's kind of awesome to find someone with a similar taste in food; everything that you post about seems to be Just The Thing that I've been wanting, but wasn't sure how to make. I've made your Curried Lentil Soup about 5 times now in the past month or so -- I just made it again last night. My husband and 4 small children all love it. Thank you for such great recipes! Oh now that's interesting! I must admit I don't think I'd have the nerve to start popovers in a cold pan or oven, but I grew up making Yorkshire pudding every Sunday. In that vein, I can't help but wonder about these as an accompaniment to a savory something. The oats could make it terribly Scottish.

In fact, I keep a breakfast recipes folder that's full of ideas for that most delightful yet underappreciated meal. Some favorites: my mother-in-law's coffee cake; your previously-featured banana bread with chocolate, cinnamon, and sugar; dutch babies with freshly-squeezed lemon juice and powdered sugar; and the list goes on!

Keep them coming!

Hi Molly, at the risk of obsessing on technical details, what do you think is going on w/ the pre heating? I don't really make popovers, but learned Toad in the Hole while in England, and the same technique (hot fat in a hot pan) seems essential. It also seems that humidity matters? At least, on my last trip to my mother in law during a Connecticut summer, I had a devil of a time getting things to "pop", and my MIL, who grew up in the South, insisted it was inadequate pre-heating of the cooking vessel.

We keep cups of ground oats on hand, for oatmeal scones, but mostly, oatmeal pancakes. Have you tried the lovelies in Good to the Grain? Very like yours, only instead of soaking the oats overnight, you get a head start with cooked oats and -- you guessed it -- oat flour. Oh! And chocolate chip cookies, the faux-Neiman Marcus numbers. Very excellent.

You know. Just in case you need more oat flour excuses.

There are times I feel more exhausted after working on a piece than I ever have after a basketball game. The emotional energy it takes to connect with each character and to put yourself in each scene takes a toll. I'm glad you're willing to go through it. Your first book is one of my ultimate favorites and I can't wait to read the second one.

I must say, there are many mornings in a month and to only post one breakfast recipe a month makes me very sad. Breakfast is the one meal I have to have new ideas for....I'm fresh out of good, new breakfast ideas and at 6:30 I am really unlikely to come up with anything edible on my own. Feel free to share your breakfast ideas much more often.

The last time I made popovers must have been high school (too long ago), when I probably didn't know what I was doing...but this post is encouraging to give popovers a second try.

Popovers are only really good right out of the oven, right? How many people would this recipe feed? Or, rather, how many people should I invite over so that I don't eat all the popovers?

I love popovers and will try these soon! But first I want to mention that I just read your book and marked almost every recipe as one I had to try asap.

I started with the scones today and I'm pleased to report that for the first time in my life I turned out a decent one (actually eight)! Thank you. Instead of lemon and ginger (which I will try) I used (frozen) raspberries, which I was craving.

Now I have to find someone to take them off my hands or I will eat every single one of them.

You must have a constant supply of whole milk in your household. I only keep soy in my fridge, and have to go out and buy whole milk or heavy cream almost every time I read your recipes! But, I really appreciate how ballsy you are with whole milk and butter and I always love the results.

A cold oven start works for my Sticky Buns. Fresh from the fridge, they finish their 2nd rise in the oven as it comes up to temperature. But popovers??? no way, they really do love a hot oven and preheated pan. Thanks for the new, tempting recipe.

Recently I baked chocolate banana muffins and replaced a cup of flour with a cup of baby oatmeal cereal (uncooked) because babies like real oatmeal anyway.... and the muffins were light and yummy! LOVE me some popovers.
I can empathize with you on lack of sleep. Children do that to you, but you love them, unlike weird neighbors.

Thank you so much for offering a recipe for a wonderful baked good that does not include sugar. About three weeks I decided to cut out sugar from my diet (except honey) and I find myself missing muffins, quick breads and the like. These sound wonderful and I can't wait to try them.

And while we're on the topic, if you have any direction to offer about when/how to replace honey for cane or brown sugar in recipes, I'd be most grateful.

Thank you! I looooove popovers. And oatmeal. Yay!

I am fiddling with the idea of a 60% full life. Because if you have a 100% full life, then when something else comes up, and it always does, suddenly you have a 130% full life and that does not work. If it's 60% (not 50%, then you feel like a slacker), the unexpected things fill it to 90% and you still have time for a nap or to stare out the window or make oatmeal popovers when you want to.

That having been said, I eagerly anticipate enjoying your next book. Your blog keeps me going, but I need another Molly book!

The recipe looks great - but I'm still searching for the perfect popover pan. Also, we must have the same neighbor. I have a strange one next door that does the same thing, but with a bright headlamp! So weird.

I love oats. I think it is cool that here in Denmark there is a trend in fine dining to bring back humble grains to the mainstream. Oat porridge with pickled mushrooms and smoked almonts, mmmmmm.......

Probably good as breakfast too.

i adore popovers and will give these a try tomorrow...

i have a neighbor who is really into his leaf blower and other LOUD tools... and what kills us is he wears his huge headphones for hours while he works in his yeard and drives us all nuts. thank goodness it isnt everyday..

can you talk to your neighbor?
your poor pooch and you need rest...

Is there any feeling better than writing something and having it just *work*?

The closest comparisons I can think of is the moment when you bite into some new baked good, after worrying the whole time it was in the oven and cooling that it wouldn't turn out well, only to find your new favorite dessert.

All the frustrating, tear-inducing moments of writing definitely make up for the moments when everything comes together.

Made these oatmeal popovers for Sunday b'fast and my hubby loooved them. I haven't made anything in a long while that he liked as much as these. They really were delicious and easy to make on a Sunday morning. Another great recipe, Molly.

Oh, that's an interesting take on a classic popover! Your cold- and hot-oven-popover methods remind me of the Yorkshire pudding, though. Haha!

Molly, by the way, I have to tell you that I've been a silent reader of yours for quite a few years. Your writing is stellar. It was you who's inspired me into taking on what I'm doing today, both as a blogger and as a full-time writer. (I'm a writer by profession. It was upon graduation from college that I decided to work as a writer, well, since I was a media student anyway.)

I made these on Saturday morning and they were rad. My husband and I ate all eight of them in a single sitting, with marmalade, as suggested. It was the first time either of us had had a popover. It was also the second through fourth time either of us every had a popover.

I made these last night for dinner.. we ate them with ham and cheese, butter and honey and jam with roibos tea.... they were SO good! I love breakfast at every meal! great idea Molly!

I don't write in cafes because I talk to myself as I write. And your neighbor is related to my kitty-corner neighbor who starts all outdoor projects on Sunday eve at 9 p.m. (except in the winter. And we don't have windows open in the winter) And as it is winter, having some oatmeal popovers on hand to warm my winter soul would be lovely. As yours is. Best of luck with the writing.

BIG thanks for the dark pan heat tip. I've not made popovers since 8th grade home ec and that's been many, many moons ago. I finally sprung the dough for a popover pan. My hubby had never even heard of them, so for him it was like magic to see them bake! I followed Betty Crocker's simple recipe and they got so dark, I had to take them out early. On the next attempt, I lowered the oven a few degrees, but still too dark... They were still good filled with feta + scrambled eggs. Pan came with Rosemary Shallot recipe that sounds savory, but first am going to try your recipe/method and hope for golden results! Teri in TX

I have been making popovers once a week since Jan 2015, and i stopped late June and just went to make them and the humidity is 50% and they didn't rise. I do make them in a real popover pan using the following ingredients...i put 2 eggs in a 2 cup measure to make sure they are 1/2 cup, add 1 1/4 cup milk, 1 tablespoon butter, 1/2 teaspoon salt, and 1 teaspoon sugar, and microwave 1 minute. In a bowl i put 1 1/2 cup reg flour and then mix together when the milk is warm. I heat the oven which says it is 450 on the thermometer, then spray the pan which has been heating all this time. Rack is at 1/3 of oven. Pour batter in using measure cup and put in over. Cook 20 min and lower over to 350 for 20 min more. This has worked up until June. What is wrong????
